45.3 ALES

Ale, which is top-fermented, is a much older style of beer than lager, with complex roasted and fruity flavors and potentially higher ABV. There is an enormous range of varieties, some of which evade easy classification.

Anglo-American ales

Bitter refers to a lightly carbonated, pale-ale-style beer, usually served on draft, and accounts for a large fraction of the ale sold in Britain. Old ale is stronger with a malty taste and is often sweet. India pale ale (IPA) was originally made for export to India, with a strong presence of hops as a preservative for the long voyage. Barley wine usually refers to a brewer’s most potent ale, typically 8% ABV or higher, strong in color and often sweet. Winter warmer is sometimes used to describe similar, slightly weaker versions.

Porter and stout

These are made from dark-roasted malt or barley and are dark brown to black. They have a toasted, nutty taste. Porter is the lighter-bodied of the two, and it has had a revival after a period of decline. Stout, which is more complex and filling, can be further divided into dry stouts and sweet stouts.

Belgian-style ales

Sometimes called Belgian speciality beers, this is a diverse category of ales usually produced in and around Belgium. They tend to have distinctive flavors, more alcohol, and include many of the world’s most highly esteemed beers. Some better-known breweries are Leffe, Rodenbach, and Duvel. Abbey ales are made by breweries associated with a monastery or imitative of that style, such as L’Abbaye des Rocs and Karmeliet. Trappist ales are brewed within the walls of a Trappist monastery under the complete control of the resident monks and are internationally renowned. Dubbels are double-fermented and are strong (over 6.5% ABV) and dark with a malty, fruity taste. Tripels are stronger yet and tend to be pale and hoppy.

Wheat beers

Beers made from wheat in addition to barley are called wheat beers or white beers. They are usually light yellow and opaque and are often flavored with orange peel or coriander. One of the most refreshing styles of beer, they are popular in warm weather, sometimes with a slice of lemon.
